Healthy Breakfast Muffins

These muffins are inspired by a recipe from Super Natural Cooking, a book by Heidi Swanson. I really like this book (and also Heidi's recipe blog 101Cookbooks) since Heidi features whole and natural ingredients in her vegetarian recipes. The recipe I took as a base for these muffins are the Espresso Banana Muffins on page 38. I especially like the fact that the muffins are partly sweetened by overripe bananas. Another nice twist is that they contain plain yogurt which adds some protein. Since I had a lot of overripe bananas at hand, I used those and only a bit of cultured buttermilk instead of yogurt. I added agave syrup as a sweetener and used millet and kamut flour to reduce gluten. Instead of butter, I used virgin coconut oil which supports the banana flavor in a very nice way. The muffins are not particularly sweet on purpose - I usually eat them with a bit of cultured cream cheese and St. Dalfour fruit spread. My recipe can be found here.

Dieses Rezept ist inpiriert durch die Espresso Banana Muffins in Heidi Swansons Kochbuch Super Natural Cooking. Es gibt viele Gründe, wieso ich dieses Kochbuch und auch Heidis Blog 101Cookbooks sehr gerne mag: die Rezepte sind vegetarisch und Heidi verwendet saisonale Gemüse und Früchte und Vollwertprodukte. Am Espresso Banana Muffins Rezept gefällt mir besonders, dass ein Teil der Süsse von überreifen Bananen kommt und dass die Muffins Joghurt enthalten, was u.a. den Proteingehalt erhöht - für mich als Teilzeitvegetarierin durchaus immer ein interessanter Aspekt. Weil ich grad noch 3 sehr reife Bananen hatte, habe ich für mein Rezept aber das Joghurt weggelassen und nur wenig Buttermilch zugegeben. Anstelle von Butter habe ich natives Kokosfett verwendet (virgin coconut oil ist der englische Begriff - ein Artikel über die gesundheitlichen Vorzüge von hochqualitativem Kokosfett findet sich hier - Dr. Mary Enig ist die Ernährungsspezialistin für Oele und Fette in den USA). Ich habe Hirse- und Kamutmehl verwendet, damit die Muffins etwas weniger Gluten enthalten. Die Muffins sind absichtlich nicht sehr süss, weil ich sie gerne mit etwas Cream Cheese und St. Dalfour Konfitüre esse (diese Konfitüren werden mit Traubenkonzentrat statt Zucker konsverviert).
